Apologies to anyone who might : have tried it out already. : --------------------------------------------------------------------------------- : The Jerusalem Hoummos Recipe (name given by J. Sheps, my roomie) : In a blender or food processor mix: : Olive Oil, enough to cover the blades of a waring blendor or to reach : the first blade of a food processor. Substitution with any other vegetable : oil is not acceptable. : A dash of water. : Juice of half a lemon or a heaping tablespoonful of bottled lemon juice. : Cayanne pepper, about 10 shakes. : White pepper, about 5 shakes. : a pinch or two of salt. : A heaping tablespoonful of Tahini. (almost a sphere) : --> One or two cloves of garlic! : A small handful of parsley. : Spin 30 sec. : Open a can of chick peas and drain. : Add Chick peas, one third of a can. : Spin 30-60 sec. : Add chick peas again and again until the can is empty. : Blend until smooth. : Taste and add more spices (as above) as needed. Be careful adding salt as it : increases the effective dose of all other spices. : Sprinkle with paprika and serve with Pita. : --------------------------------------------------------------------------------- : Notes: : If, while blending chickpeas it starts to look fibrous and dry add more oil. : Be careful ofthe blades creating an air pocket and spinning free, : especially in a waring blender. You will have to clear the air pocket manually : with a wooden spoon. : More tahini will make it taste like what they sell at Aida's but too much, : or too litle oil, can destroy a blender. It happened to my (roomie's) Father. : Ethnic mods: For the Chinese palate doubling the salt is acceptable. : For Ethiopians double the lemon juice, or even triple. : --------------------------------------------------------------------------------- : There you go... if he forgot anything else, I will post his email address, and : you can mailbomb him. : I wonder how many hoummos recipes have hints for Oriental palates? : I would welcome any recipes out there for food.
